By 1863, the year President Abraham Lincoln declared Thanksgiving a national holiday, one in four of Baltimore's residents were transplanted Germans and spoke the tongue as their first language. Blacks, whether fleeing from slavery before the Civil War or settling in for a fresh start after the abolition of slavery, also played a major role in shaping the city's food scene.
